I found it! The custom contact fields are somewhat renamed but they appear to be there. i.e. Home Address becomes {{recipient.home_address}} there doesn't seem to be anything differentiating them…

Suggestion: Add a 'Next Monday at 9am' option similar to the 'Tomorrow at 9am' option. I suspect that like me, people often do that manually for things they want to start fresh on next week.
